How time flies!

I honestly can't believe how fast 2013 has flown by...now it's October 24th and Halloween is right around the corner.  Not one of my favorite holidays, but I do celebrate with Chili for those who come around.
Even members of the local church come by for their Halloween Fix.

I call it PETA Chili, (NOT after my least favorite spin on a piased, self righteous, irrational group), my version stands for "People Eating Tasty Animals".  Nine pounds of meat and seven hours to make, it's pretty damn good if I do say so my damn self!
Here's the recipe:

PETA (People Eating Tasty Animals) Chili
Ingredients:
6 Tbs. Oil or Lard
2 Cups Chicken Broth
4 lb. Pork, cubed approx. ¼ - ½ in.
3 lb. Beef, Cubed approx. ¼ - ½ in.
2 lb. Ground Turkey
12 oz. Beer – Pilsner type, Domestic if desired i.e.: MGD, or Mexican i.e.: Pacifico or Mexicali
7 Cups Peeled, chopped tomatoes
¼ Cup finely chopped celery (~1 med. Stalk)
2 tsp. Sugar
3 Cans Orgega diced green chiles
3 tsp. Ground Oregano
3 tsp. Ground Cumin
3 tsp. Fine Black Pepper
4 tsp. Salt
5 Tbs. Chili Powder
1 tsp. Fresh Cilantro (~ ¼ Bunch Chopped)
1 tsp. Fresh Thyme (~ 6 Sprigs Chopped)
6 Cloves Garlic, finely chopped
2 Cups Purple Onion, diced (~1 large)
1 Cup Red Pepper, diced (~1 medium)
1 lb. Monterey Jack Cheese
Limes – cut into wedges for use immediately before eating
Sour Cream

In a 2 gallon pot, simmer the chicken broth while preparing remaining ingredients.
In a 2 quart saucepan combine celery, tomatoes and sugar.  Simmer 1 ½ hours, or until all ingredients are completely tender.
Put the following into 12 oz. of beer and stir until all lumps are dissolved: Oregano, Cumin, Black Pepper, Salt, Chili Powder, Cilantro and Thyme.
Add tomato mixture, chiles, beer mixture, and 3 cloves garlic to broth in the 2 gallon pot.  Stir with a wooden spoon and bring to a low simmer.
Note: When browning the meat, use 1 clove garlic, finely chopped, salt and pepper.
Brown pork in a skillet with about 2 Tbs oil.  With a medium size skillet, it is advisable to brown only half at a time.  The pork should become white on all sides and fully separated.  Do not overcook at this point.  Add pork to the 2 gallon pot and bring to a low boil for about 30 min – pork needs a ½ hour start on the beef and ground turkey.
Brown turkey in a skillet with about 1 Tbs oil.  Add turkey to the 2 gallon pot.
With the balance of the oil, brown the beef.  With a medium size skillet, it is advisable to brown only half at a time.  The beef should become white on all sides and fully separated.  Do not overcook at this point.  Add beef to the 2 gallon pot and bring to a low boil for about an hour.
Add chopped onions and peppers and cook at a low boil for about 2 – 3 hours, stirring with a wooden spoon every 15 – 20 min.
Remove the Chili from the stove and allow to cool for about 1 hour.
After Chili is cool, refrigerate for 24 hours to allow the spices to permeate the meat and the flavors to meld.
Reheat and serve or can be frozen in freezer Ziplocs.
About five minutes before serving, grate the Monterey Jack and add to the chili.  Stir with a wooden spoon until completely dissolved.  If only reheating part of the chili, use about 1 oz. per serving (to desired taste).
At service, add the juice of one large lime or two small limes for the whole pot.  Individual servings can be served on the side for use immediately before eating.

Serve with a dollop of sour cream and Oyster Crackers, saltines, Sourdough French Bread or your favorite rolls/bread.

Reading my past posts, I was a little high strung/stressed/freaked out of late, but I'm OK now.
I need to realize that work is work and life still goes on.  As long as I have my sobriety, values and family and a good program of living it's all good.

I have been hitting the gym every day at lunch and I can say two things after day 3...I really enjoy it and DAMN I'm sore.  15 min cardio, then 25 min lifting.  I'm sure I'll get used to it and eventually won't hurt every day, but for now I'm kind of hating it.

I need to go thru all of this and see which recipes I've posted and which I still need to.  Thinking about it, I'd eventually like to put together some sort of cook book. Don't know if it will be something to publish or to pass along to the kids, but cooking and creating is something I'm passionate about and love to share.

I also need to break up the monotony in my meal preparation at home.  Kind of on a tight budget right now so that doesn't help, but even still there are many meals I can throw together, and those are usually the ones that everyone likes.

Finally, back again!

This post was written in April of 2013.  Since Blogging isn't necessarily my "thing" I didn't know I had to hit Publish when I was done.  So...I inadvertently posted this almost five months later...

 I would like to say I'm back after a well deserved hiatus or that I have been too busy to post anything, but that would be a crock of shit...I forgot my password and just recently found it among a bunch of stuff in my desk drawer at the office.  Oh well, at least I'm back for a minute.

There are a couple of things I would like to chronicle:
- Recipes and the processes I use to create food
- My weight loss/workout/health and fitness
- Sobriety

Let's face it, for years and years my life has centered around food of all kinds.  About 15 years of that part of my life were dedicated to food and the drink that 'enhances' it, fortunately that was just part of my experience.
Growing up in the San Francisco Bay Area provided me with many opportunities to try foods that were of many differing ethnic backgrounds and qualities.
Traveling extensively has also afforded me opportunities I wouldn't have had otherwise.
I think maybe I will begin a cookbook of sorts through this, chronicling what and how I prepare and serve not only food, but meals that not only feed the stomach but the eyes and possibly even the soul as well (corny huh?)

Since Julie doesn't like ham, for Easter I made a Grilled Salmon with Wild Rice and Steamed Asparagus with a dipping sauce:

Salmon Marinade
I use large fillets of Salmon (2+ pounds), skin on, when I grill this family favorite.
Heat a clean grill on high to about 400º, and oil grill lightly before putting fish on.
The "marinade" should only be on the fish for about an hour before grilling.  Any longer and the salt and citrus will cook it and make the meat tough and dry.

Apply to the flesh side of the fish:
Lawry's Seasoning
Lemon Pepper/Mrs. Dash
Dried Parsley Flakes
Lemon/Lime Zest
Juice of 1/2 Lemon/Lime - Fresh
Fresh Chives - cut into 1/8 in. pieces
Spritz of Beer (MGD or the like) to lightly coat
Drizzle of Olive Oil to lightly cover

Lightly cover with plastic wrap and allow to sit for a while.  After fish has marinated, remove plastic and place, skin side down, on the grill. Grill salmon (lid down) on skin side for about 3 minutes, then flip to flesh side down.  Allow to cook for another 3 minutes.  Flip again and 'test' for doneness.  Depending on the thickness of the fillet, it could use another minute or so.  When pressed with your finger, flesh should have some slight resistance but not be hard to the touch (overdone).  Remove salmon from grill, put on a serving platter and tent with foil for about 6-7 minutes.
Serve with lemon wedges and enjoy!

'Special Sauce' Steamed Veggie Dipping Sauce
This sauce is a go-to for all steamed veggies, especially when some kids don't like them (broccoli, asparagus, cauliflower, etc.)  I don't know of anyone who has tried this for the first time and been able to tell me the ingredients.

In a bowl, whisk together (with a fork or a wisk):
1/2 cup Mayonnaise
1+ teaspoon Light Soy Sauce

The sauce should be just about a light khaki color.  If necessary, add more of either of the ingredients to get the taste you want.  This should be refrigerated if prepared in advance.

Holy Shit!

I'm going to vent a little today...
I don't think I have been so emotionally, mentally, physically and spiritually tapped as I am today.
I am a First Place kind of guy, pretty much win at all costs (I do have my limits with family and sobriety though).  The past number of months have been a departure from that and now my back is against the wall - I don't have an option but to pull absolute perfection out of my ass!
We have a lot teed up, just need to capitalize on it.
Is it possible?  Absolutely!
Can I do it on my own?  Absolutely NOT!  I MUST have God on my side, with me all of the way.  I can give myself all of the credit but really, it's only possible through God and through the Universe. I also couldn't do it without the unending and unconditional support of Jules - she has been through it all, thick and thin, and still seems like there is no doubt in her mind that we'll pull it out!

More Family Recipes - My Way

Chicken Brocoli

CHICKEN TORTILLA
Sauce…
½            Onion, chopped
1              Garlic clove, chopped
1T           Canola Oil
2              Chicken breasts, shredded (Rotisserie, grilled, whatever way you wish to cook it)
½ t         Salt and Pepper (S&P) - to taste
1t             Cumin – to taste
¼ c         Chicken Stock/White Wine/Milk - more or less to thin consistency of the sauce
2              Can Cream of Chicken Soup
1              Can Cream of Mushroom Soup
2              Cans of Ortega Roasted and Diced Green Chiles

Layer Items…
12            Corn Tortillas cut into pieces (about 2”X2” or so)
1 lb.        Grated or Shredded Cheddar/Jack/Pepper Jack any combination of cheese

Prep…
In a large skillet, sauté onions and garlic in oil until fragrant, about 2 min.
Stir in Chicken and cook for about 1 min. 
Add Chicken Stock/White Wine to deglaze pan and sauté for approx. 2 min until it reduces a little. 
Add cumin, S&P, soups and green chiles. 
Stir, warming/cooking for about 2-3 min.  Add more seasoning to taste, if needed.

Assembly and Cooking…
In a Dutch Oven, add a little of the sauce to cover the bottom.  Add a layer of Tortillas, then spoon/ladle in a layer of sauce, then a layer of cheese.  Repeat until the sauce is gone and you have a layer of cheese on top.
Cook in a 350° oven, covered for about 30 min. until the middle of the casserole is bubbling.  Remove lid and cook for an additional 10 min. until cheese is a little browned and bubbly.

Serve
 Over white rice, with fresh tomatoes, cilantro, lime wedges, sour cream, salsa, whatever you like to make it more or less “South of the Border”

2012

Wow, can't believe how long it's been since I last posted.  On the good side, things have been really busy at work.  However, haven't had much time to do any experimentation in the kitchen.  Some of my most popular dinner items come from "snafus" such as the gas going out on the grill, and emptying the fridge of leftovers.

What I really need to do is lower the Sodium and fat in these recipes. I haven't been terribly creative in the kitchen lately, so that's been a little frustrating on my end.  Most of that has to do with my schedule.  The nights when I would have time are now broken up by meetings.  I'm still a little freaked about "Chairing" the Wednesday meeting, but it's been a month already and it's only a three month commitment.

It's been a while...

It's hard to believe that someone can write a blog every day.  Seems a little daunting to me, not to mention taking up time - I guess after I get used to it, writing daily will become just another thing I do every day.

I don't usually get involved with political banter but could you even believe Rick Perry in last night's debate, talk about "stepping in it" as he so eloquently put it.  Know your f^@#ing platform for Christ's sake.

As part of what I do each day, I take personal inventory and try to improve on my thoughts and actions.  Sometimes it's easier said than done though. I guess this is as good of a place as any to record what I've done throughout the day and how I've tried to improve...

Today I got up early, helped with getting lunches and breakfasts prepared then left early for what I thought was an MRI appointment.  After checking in and waiting for about an hour the lady (who was very nice I might add) says to me "John, do you know you're really early for your appointment?"  Turns out the appointment was for 12:30 PM, not 8 am as I had written it down...damn, part of the morning wasted!  I rescheduled for 7:15 AM on the 18th  Quite early but if I have to fast, the earlier the better - right?

They say I might have cancer.  That there are cells which are reproducing too fast and either the liver is doing a GREAT job at regenerating itself, or those cells are cancerous - I'm going with the former explanation!  Anyway, that's the reason for the test.  I have way too much to do right now to slip backwards on the recovery to better health...HOLD ON, LET'S GO!

I guess now is the time to get shit done around the house while I'm there, no more just hanging around.  I did start "working out" over last weekend.  I was a little sore, but nothing earth shattering.  I did a lot of bicep curls, forearm curls, triceps and lat work out along with sit ups and push ups.  If I can continue doing that while I watch tv, I'll be stoked.

Absolutely swamped @ work, have way too much shit to do and take care of.  I'll write later...

UEA

Since moving here to Utah, I haven't really understood what UEA weekend is, or why they have it.  I've heard that it had something to do with the opening of the deer hunt, and kids needed to be pulled out of school without any punishment so they (schools) took the end of the week off; but what about those guys at work who don't have kids living at home who all of the sudden disappear for a long weekend during the middle of October?  I guess I should invest in a couple of guns/4-wheelers/camper trailer/etc. so I can take advantage of the "religion" that is the deer hunt...don't get me wrong, if any of you know Julie's grandfather and family you'll know it is indeed a religion - complete with the sacramental wine/sherry and all of the trimmings.  Now that's the way to hunt and camp!
This weekend is the preparation for my chili.  Every year I make chili for Halloween.  With 9 pounds of meat and not a bean in sight, it's a pretty hearty chili.  Consequently, friends, family and neighbors come not only for the candy but for the chili with crusty sourdough bread.  Luckily this year we have a weekend right before Halloween, so I can spend Saturday and Sunday prepping, browning, and cooking.  It's always better after it has been sitting a day anyway, so that will be perfect!
I also need to find the recipe for my Bloody Mary Mix.  Although I'm not partaking of the special additive any more, it is still quite the beverage on it's own.  Add some celery, stuffed olives and a couple of pieces of Giardiniera and you're good to go - not to mention a shrimp or so...
